Sources we trust for canning safety

Home-canning advice should lead back to a tested process. These primary sources publish research-based methods, recipes, and food-safety warnings.

National Center for Home Food Preservation

Canning guidance and tested recipes, including boiling-water and pressure-canning processes, equipment, storage, and altitude adjustments.

USDA Complete Guide to Home Canning

The NCHFP library provides the USDA guide by topic. Match the current process to the food, pack style, jar size, and elevation.

CDC botulism prevention

CDC’s home-canned food guidance explains equipment choices, low-acid food risk, storage, and signs that mean a container should be discarded without tasting.

Land-grant Extension services

State and county Extension offices can provide locally relevant, research-based preservation guidance and may offer dial-gauge testing. Confirm that a recipe identifies a current USDA, NCHFP, or Extension process.
